Apricot Chicken Recipe
2 lb chicken pieces
1 package french onion soup mix
2 cup apricot nectar
1 1/2 lb apricot halves (canned)
1 flour (plain)
Dust chicken in flour. Fry chicken lightly until starting to brown.
Place chicken in a casserole dish or a very deep frying pan. Add soup
powder, nectar and apricots. Mix everything well. Simmer for 1 hour.
I normally use 2 pieces of chicken per person and about a 1 1/2 lb
can of apricot halves. This will suffice for 4 to 6 people. If you
cannot get nectar, then use the juice from the apricot halves. (Of
course, if you can buy apricots in nectar...)
The French onion soup quantity is not critical, but a soup packet that
makes up about 6 C is about right for 4 to 6 people. Serve with potato
(baked or boiled), buttered carrots and peas.

came to visit me. Yield: Serves 4-6.

A few tips on healthy eating
In planning a diet, the important thing is to also endeavour to restrict your ingestion of refined carbohydrates, salt and fats.
Some low carb diet tips:
* Don't forget the fiber
Cutting the carbs in your meals usually leads to fiber reduction as well. Check for low carb recipes that are rich in fiber to restore the balance.
* Understand the food labels
Be sceptical of the food label that boasts to be 'low carb' - check the nutritional information on the reverse of the can or packet. A good number of are only a little reduced and in some instances still higher than a competitors standard brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - often the carbs are identical.
Superfoods containing carotenes
(includes carrots, collard greens and tomato puree)
These orange and green healthy plants contain alpha-carotene and beta-carotene thought to help in helping stop cancer, spefically cancer of the esophagus. A good number are low in calories, so should be included in every weight loss regime.
