Crock-Pot Chicken Recipe from the Recipes 4U Cookbook

 

Crock-Pot Chicken Recipe

Recipe Ingredients

3 carrots, sliced
1 onion, quartered
3 celery stalks w/leaves cut in 1-in, ch pieces
6 mushrooms, med size, sliced
2 garlic cloves coarsely chopped
2 tsp salt
1/2 tsp black pepper
1 tsp basil leaves
1/2 cup water, chicken broth, or white win, e
1 whole chicken, about 3 lbs

Recipe Preparation

Put carrots, celery, and mushrooms in bottom of crock-pot. Place whole
chicken on top. Place onions and garlic around chicken, placing some
of each in cavity of the chicken. Top with the salt, pepper, and
liquid. Sprinkle the basil over the chicken. Cover and cook on LOW
for 8 to 10 hours (using HIGH, 3 1/2 to 5 hours using 1 cup liquid).
Remove chicken and veggies. I serve this with rice, but you could
also add some potatoes in the crock- pot (if you have room) and
that'll work, too. FOR A GRAVY, I've used 4 tb of flour in the
"drippings" and used a hand blender (it came out nicely)... Or you
can use 1 can of Cream of Mushroom soup blended into the "drippings."

* Understand the food labels Watch out for the food label that proclaims 'low carb' - check the nutritional information on the rear of the can or package. Some are only a little less and in some cases still higher than a competitors normal brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - often the carbs are identical.

* Use reduced carbohydrate chocolate for chocolate muffins. If you have taken the time to convert your tasty chocolate chip cookie or muffins recipe using soy flour, it would be madness to mix in those high carbohydrate standard chocolate. Chop up a reduced carb bar of chocolate into tiny chunks and use that in its place.

Lycopene is a naturally occurring coloring agent and part of the same family of phytochemicals as carotene. Lycopene is the agent responsible for the deep red colour of a good number of natural foods.

Usefully, unlike numerous vitamins, lycopene is not damaged during the cooking process, but is observably made more effective by going through the cooking process.

. Its most valuable advantage is that it serves as an antioxidant and appears to be of use in the battle to reduce the probabilty of contracting cancer.

This useful phytochemical is the most efficacious eliminator of singlet oxygen, which is connected with aging of the skin. It's also thought by many researchers to prevent the development of diseases affecting arterial blood vessels.
