Ingredients
1 can (16 oz) tomatoes,cut up 1 medium onion,chopped (1/2 cup) 2 cl garlic,minced 1 bay leaf 1/3 tsp pepper 1 cup frozen peas 4 eggs 1 cup sliced smoked sausage or 1 fully cooked ham cut into 1 bite - sized strips 1 2 oz. jar sliced pimento, 1 drained

Preparation
In a 10 " skillet combine the UNDRAINED tomatoes,onion, garlic,bay leaf and pepper.Bring to boiling.Boil,uncovered, 8 to 10 minutes or until most of the liquid is evaporated and onion is tender.Discard bay leaf.Stir peas into tomato mixture.Break eggs into tomato mixture,being careful not to break yolks.Arrange sausage or ham around eggs.Sprinkle pimento over all.Cover;simmer over low heat 10 to 12 minutes or until eggs are of desired doneness.Serve from skillet. Serves 4.
