Healthy Cornbread Recipe from the Recipes 4U Cookbook

 

Healthy Cornbread Recipe

Recipe Ingredients

3/4 cup corn meal
1 cup whole wheat flour
4 tsp baking powder
3/4 tsp salt
1/4 cup honey (or use molasses -
1 it's good too!)
2 tbsp applesauce
3/4 cup soy milk, milk or water
1 egg (or 1/4 cup egg
1 substitute) beaten
1/2 cup water *

Recipe Preparation

Sift together corn meal, flour, baking powder and salt. Add remaining
ingredients; mix well with a spoon. Pour into a 9" round teflon
baking dish (or spray a 9" round glass baking dish with "oil & flour"
non-stick spray). Bake at 350 degrees for 25 minutes, or until golden
brown.

* Comment from Rob Ryerson: He had to add 1/2 c water in order to
achieve the consistency of a batter.

Dieting made easy

One useful tip is to drink plenty of water. From time to time at some stage in a hectic morning, you guess that you want a snack but in fact you might just need a refreshing glass of water or orange squash. The feelings of needing food and needing a drink are quite similar, but one of the two can lead to a broken diet and the other is ok.
Some lower carb diet guidlines:
* Eat regular meals Most reduced carb recipes are, you won't be surpised to learn, low in carbs. We all need energy, and carbs are a quick acting energy source. A low carb diet requires great care in controlling your energy levels, as any energy contributed by non-carbohydrate sources is slower acting.

* Use reduced carb chocolate bars for cookies and muffins. Once you have converted your favorite chocolate cookie or chocolate muffins recipe using soy flour, you donít want to mix in those high carbohydrate full-sugar chocolate. Cut up a reduced carb bar of chocolate into little pieces and use that in its place.

(eg. Arugula, Brussels sprouts, Turnips and Napa)
Vegetablesi in the brassica family are full of vitamins (eg.folate and vitamin c), minerals (including potassium and selenium), fibre, chlorophyll, antioxidents and isothiocyanates.

In addition to their numerous beneficial effects, some of these nutrients are thought by doctors to help reduce the cancer risk in those prone to it..
