Andy's Murgh Kurma (Chicken Curry) Recipe
4 green cardamon pods (up to 8)
2 lb chicken
1 cup plain yogurt
6 cloves, whole (up to 8)
1 tsp salt
2 tsp cinnamon
1 tsp turmeric
1 medium onion
6 szechuan peppercorns (up to 8)
4 tbsp vegetable oil
2 bay leaves
5 garlic cloves (or less, to taste)
1/4 tsp ginger root
1 tsp black pepper
1/4 cup tomato puree
1 cup water
Thoroughly clean the chicken pieces, then marinate with yogurt and
salt for 1 hour.
Meanwhile, prepare the spices. Chop the garlic and ginger, then add
black pepper to this mixture. Set aside in a small bowl.
Near the end of the hour of marinating, melt the shortening in a
coverable skillet (woks will do). Chop the onion and brown in the
skillet for about 10 minutes.
After the onions are ready, add the garlic/ginger/pepper mixture. Let
simmer for approximately 5 minutes, then add the chicken. Let the
chicken simmer for approximately 30 minutes or until cooked.
Add the cardamoms, cloves, cinnamon, turmeric and bay leaves. Leave
them whole. Simmer for 5 minutes. Finally, add the tomato puree and
water to the mixture and cook until the mixture has thickened. Serve
with rice and chapati.
* A simple chicken curry.

Food Tips of the Week
Dieting made easy
One useful tip is to drink plenty of water. From time to time at some stage in a hectic morning, you guess that you want a snack but in fact you might just need a refreshing glass of water or orange squash. The feelings of needing food and needing a drink are quite similar, but one of the two can lead to a broken diet and the other is ok.
The argument against reduced carbohydrate diets
Its all the rage, but it is truly safe and healthy for you?
Moreover, it has been proposed that the kidneys can become stressed and that the resultant change in blood acid levels can result in the loss of bone, but some of the scientifc research trying to test the theory have struggled to find any evidence of damaged kidneys or bone damage.
Although there is evidence that proves that low carbohydrate diets can help with your diet, some of this some research has proved to be controversial among nutritionists, and their relative safety has been the cause of great debate
Foods containing allyl sulfides
( includes pickled shallots, white onions and spring onions)
The onion family of vegetables is rich in allyl sulphides, a chemical which experts believe might be linked to a reduced risk of stomach and colon cancer.
Although there is insufficient hard medical proof at hand, allyl sulfides are also thought by nutritionalists to reduce symptoms with blood circulation, sterilization and diabetes.
Foods containing allyl sulfides are low in calories, so should be included in your weight loss program.
