Lima Beans Deluxe Recipe

Ingredients
1 package (10 oz.) frozen lima beans 1 tbsp reduced-calorie margarine 1 tbsp all-purpose flour 1 cup skim milk 1/2 tsp salt 1/8 tsp pepper 1/2 cup (2 oz.) shredded reduced-fat chedda, r cheese 2 tbsp reduced-calorie ketchup 2 (4 oz.) jars diced pimento drained 1 vegetable cooking spray

Preparation
Cook beans according to package directions, ommitting salt and fat. Drain and set aside. Melt margarine in a medium saucepan over low heat; add flour, stirring until smooth. Cook, stirring constantly, 1 minute. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Remove from heat. Add beans, cheese, ketchup and pimento to sauce; stir well. Spoon into a 1 1/2-quart casserole coated with cooking spray. Bake at 375 degrees for 30 minutes or until thoroughly heated. Yield: 6 servings.

In deciding on a diet, it is essential to attempt to lower your consumption of fat, salt and refined carbohydrates.

* Understand the food labels
Don't believe sales blurb that claims to be 'low carb' - check the real nutritional information on the rear of the tin or package. A good number of are only slightly lowered and in some instances still greater than a competitors standard brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - often the carbs are identical.
* Replace sugar with a low carb substitute such as splenda.
Many recipes that require sugar can be adapted to use splenda instead. It is much lighter so you will need to do a bit of trial and error and it may not work in every case, but it does bake up nice once you have it cracked.
