Pumpkin-Bran Muffins Recipe

Recipe Ingredients

1 cup flour
1/2 cup bran
1 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
2 tbsp vegetable oil
1/2 cup pumpkin, canned or cooked
1 egg
3/4 cup orange juice
1/3 cup raisins
1 tbsp wheat germ

Recipe Preparation

Combine all the ingredients, except the wheat germ, in a mixing bowl.
Stir to blend. Spoon into lightly oiled muffin tins (or paper baking
cups sprayed with non-stick spray - my choice.) Sprinkle on the wheat
germ. Bake in a 400 F oven for 10 to 15 minutes or until lightly
browned.

Food Tips of the Week

Dieting made easy

When deciding on a weight loss program, it is essential to try to restrict your intake of salt, fat and refined carbohydrate.
The case against low carbohydrate diets
Its all the rage, but it is truly safe for you?
Many scientific studies recently have proved that eating excess animal fats can result in increased probability of cancer, heart conditions and other serious illnesses.
Moreover, it has been proposed that the kidneys may be given too much work to do and that the resulting change in blood acidity levels can lead to bone loss, but some of the scientific studies testing the theory have found no evidence of kidney damage or loss of bone.
Carotenoid foods
(includes cilantro, turnip greens and winter squash)
These colorful healthy plants are rich in the carotenoids believed by nutritionalists be a key nutrient in minimizing the risk of cancer, particularly those cancers involving the lung, esophagus and stomach. Most are low in calories, so you should add them to your weight loss regime.
