Apple & Oat Bran Muffins (Ovo Lacto) Recipe

Recipe Ingredients


MIX & SET ASIDE

1 1/4 cup whole wheat flour
1 cup oat bran
1/3 cup packed brown sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon

COMBINE

1 cup low/non-fat buttermilk
2 egg whites'
2 tbsp oil replacement (applesauce,
1 prune puree, etc)

ADD

3/4 cup shredded, peeled apple

Recipe Preparation

Combine dry ingredients. Mix wet ingredients in a small bowl. Add to
wet ingredients to dry ingredients until just moistened.

Mix apple into batter.

Spray muffin cups with non-stick spray and spoon about 1/4 cup batter
into each muffin cup. Bake in a 375 F oven for 18-20 minutes or
until a toothpick inserted near the center comes out clean. 12
Muffins.

NOTE: can store batter, tightly covered, in the fridge for up to 5
days. The picture on the front of the recipe card looked wonderful!

Make sure that you drink enough fluids. Your body requires water , it is crucial for our body's health and has no fat. It is also good in that it fills the drinker's belly and decreases feelings of emptiness. * Use soya flour or soy baking mix. When you need to use flour for baking, substitute soya flour or a bake mix like Atkins baking mix. In many cases, you can change your most popular recipes that use standard wheat flour to use these low carbohydrate alternatives.
