Banana Bran Muffins (Ovo Lacto Ff) Recipe

Ingredients
4 medium very ripe bananas 1 cup whole wheat flour 1 cup unprocessed bran 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 cup fatfree yogurt, unflavored 2 egg whites (or egg replacer 1 for 1egg) 1/4 cup brown sugar 1/2 tsp cinnamon (or more)

Preparation
Liquify bananas in a blender or food processor and add the yogurt and egg whites. Mix the dry ingredients, then add the liquid. Mix just till moistened. Spoon into sprayed (or non-stick) muffin tins. Bake in a preheated 400 degree oven for about 25 minutes. (Use the toothpick test.) Makes 12-14.

Diet tips
At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
Some low carb diet tips:
* Use splenda as a substitute for sugar.
Many recipes that need sugar can be modified to make use of splenda. It is much lighter so you will need to do a bit of trial and error and it may not work for every dish, but it does bake up nice in most cases.
* Don't skip meals
Most low carbohydrate recipes are, well...., low in carbohydrates. Your body requires energy, and carbohydrates are a very efficient source of energy. A low carbohydrate diet needs more care in monitoring you energy levels, as any energy contributed by non-carbohydrate sources is far slower to act.

(eg. Kohlrabi, Cauliflower, Mustard greens and Chinese cabbage)
Altthough not always popular with children, these vegetables are jam-packed with vitamins (eg.folate), minerals (eg. selenium), fibre, chlorophyll, antioxidents, and indole-3-carbinol.
Amongst many great health giving properties, a few of these nutrients are believed by doctors to help reduce the cancer risk.
