Buttermilk Waffles Recipe

Recipe Ingredients


BUTTERMILK WAFFLES

2 cup flour
2 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1/2 cup chopped cashews
2 eggs
1 3/4 cup buttermilk
4 tbsp melted butter
2 egg whites

BLUEBERRY TOPPING

3 tbsp sugar
2 tbsp lemon juice
3 tbsp water
1 pt blueberries

Recipe Preparation

COMBINE FLOUR, BAKING POWDER, sugar, salt and cashews in a mixer. Add
the eggs and buttermilk and mix at medium speed until smooth. Add the
melted butter and mix until incorporated. In another bowl, beat the
egg whites until stiff and fold into the batter. Heat your waffle
iron and cook your waffles as usual. BLUEBERRY TOPPING: COMBINE THE
SUGAR, LEMON AND WATER in a 1 quart pot and cook over medium heat
until the sugar melts. Pour in the blueberries and cook, stirring,
for 1 minute. Pour into a bowl and let cool before serving.

* Make reduced carbohydrate breadcrumbs for deep fried foods. Whilst you can sometimes buy reduced carb bread crumbs, you may make them at home by using low carb bread. All you have to do is toast the reduced carbohydrate bread in the oven on a baking tray. Once it is well browned, whizz it in your blender. To store, keep in an airtight container.

* Use splenda instead of sugar. Most recipes that require sugar can be adapted to make use of a sugar substitute like splenda. It is not exactly the same so you will need to do a bit of trial and error and it may not work for everything, but it does a decent job for the most part.

(includes parsley, rose hip puree and sweet potatoes)
These orange and green foods are rich in alpha-carotene and beta-carotene thought by doctors to play a role in helping stop cancer, particularly cancers of the stomach and lesophagus. Most are low in calories, so should be included in every weight loss regime.
