Baby Bean Burritos Recipe
12 (6-inch) flour tortillas
1 medium onion, chopped
1 tbsp vegetable oil
2 garlic cloves, minced
1 fresh jalapeno peppers (or 2 seeded, and minced
1 can (16-ounce) can plain or mexican-sty, le refried bea
1 cup shredded monterey jack cheese (abou, t 4 ounces)
1/2 tsp ground cumin
1/3 cup chopped cilantro (optional)
1 sour cream and salsa
1. Preheat oven to 325 degrees. Stack tortillas and cut in half. Wrap
tortilla stack in foil and heat until warmed through, 10 to 15
2. Meanwhile, in a large frying pan, cook onion in oil over
medium-high heat until softened but not browned, 2 to 3 minutes. Add
garlic and jalapeno peppers and cook until garlic is just fragrant,
about 30 seconds. 3. Spread about 1-1/2 tablespoons bean mixture on
each tortilla half and roll up jelly-roll fashion. Arrange on a
serving plate and sprinkle with cilantro. Serve warm with sour cream

One useful tip is to drink plenty of water. * Understand the food labels
Watch out for food labeling that boasts 'low carb' - check the real nutritional information on the reverse of the tin or packet. A good number of are only marginally less and in some instances still more than a competitors standard brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - often the carbs are identical.
* Replace sugar with a low carb substitute such as splenda.
Recipes that call for sugar can be modified to make use of a sugar replacement like splenda instead. It is much lighter so you will need to expirement with it and it might not be perfect for everything, but it does bake up nice once you have it cracked.
