Cut off the prawns barbels and feet. Cut open each prawn back. Remove the black digestive cord. Heat 1/4 cup of oil in a pan. Cook the prawns over a low flame. When 1 side is cooked, turn the prawns over to cook the other side. Remove when the prawns are well done. Put the cooked prawns in water with some minced ginger. Bring to a boil. Remove and drain. Put the remaining oil in a wok. Stir-fry spring onion, ginger, and garlic for a few seconds. Add tomato sauce and Chili Nam Yuey. Mix well. Add wine, salt, soy sauce, sugar, soup stock and the prawns. Bring to a boil. Lower the flame and simmer till there's almost no liquid left. Thicken with cornstarch paste and serve. Note: The boiling step is necessary to remove the oil attached to the grilled prawns to allow the seasonings to be absorbed. From The Chinese Regional Cuisine Series, Szechuan Cooking. Food Tips of the Week
Diet tips
At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
Some lower carb diet pointers:
* Eat regular meals
Most reduced carbohydrate recipes are, you won't be surpised to learn, low in carbs. We all need energy, and carbohydrates are a very efficient energy source. A low carb diet requires more care in monitoring you energy levels, as the energy provided by protein and fat is much slower acting.
* Read food labels
Be sceptical of food packaging that claims to be 'low carb' - check the nutritional information figures on the reverse of the tin or packet. Some are only marginally lowered and in some cases still higher than a competitors standard brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - usually the carbs are exactly the same.
