1 lb smoked salmon minced by 1 hand 1 tbsp capers 1 juice of 1 lemon only 1 tsp minced onion 1 egg white 1/2 tsp fresh chives finely chopped 30 barquettes-boat shaped 1 pastry

MIx well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts. Top barquettes and serve. If barquettes are not available, use round 1 inch croutons or similar cracker as base.
