Salsa Chili - Southern Recipe
1 1/2 lb pork, cubed
1 1/2 lb beef, cubed
1 1/2 lb veal, cubed or use
4 1/2 lb ground beef
4 1/2 lb prepaerd salsa
48 oz stewed tomatoes
3/4 cup chili powder
3 tsp chopped garlic
1 1/2 tsp ground cumin
1 1/2 tsp ground oregano
1 1/2 cup stock, chicken, beef, beer
3/8 cup dried onions
Cut all of the meat into small pieces. In a cast iron pan or dutch
oven, brown the meat. Pork, beef and then the veal. After the meat is
browned set aside to drain then add to the pot. Pour off all of the
oil in the pan and add some water. Bring the water to a boil. Scrape
the bottom and add this to the chili pot. Cover the pot and let
simmer for three or more hours, stirring occasionally. This kind of
chili is better the next day. This can be cooked in a crockpot for 8
to 10 hours, on low. When served put some cheese on top. Garlic bread
is very good with this chili.

Food Tips of the Week
At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
Some lower carb diet pointers:
* Eat regular meals
Most reduced carbohydrate recipes are, you won't be surpised to learn, low in carbs. We all need energy, and carbohydrates are a very efficient energy source. A low carb diet requires more care in monitoring you energy levels, as the energy provided by protein and fat is much slower acting.
* Read food labels
Be sceptical of food packaging that claims to be 'low carb' - check the nutritional information figures on the reverse of the tin or packet. Some are only marginally lowered and in some cases still higher than a competitors standard brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - usually the carbs are exactly the same.
Foods containing lycopene
(includes apricots, red peppers & baby jackfruit)
Lycopene is a natural compound and one of the same family of phytochemicals as carotene. Lycopene is behind the red color of quite a few fruits and vegetables.
Usefully, unlike numerous nutritional compounds, it does not become less effective if cooked but is observably increased in efficacy by the cooking process.
Lycoprene's main advantage is that it works as an antioxidant and is believed to be of use in the fight to lower the chances of developing cancer.
Lycopene is the strongest quencher of singlet oxygen, which is correlated with skin aging. It is also thought to impede the progression of diseases affecting arterial blood vessels.
