Ingredients
9 ripe tomatillos, husks removed, was, hed & quarter 2 tbsp fresh lime juice, plus more to tast, e 3 ripe hass avocados 6 scallions, thinly sliced 1 fresh poblano pepper, cut into 1/4-, inch dice 1/2 small jalapeno pepper, finely minced 1 small clove garlic, peeled and finely cho, pped 1/2 cup cilantro leaves, coarsely chopped 1 salt & freshly ground pepper

Preparation
1. Place tomatillos and 2 T lime juice in a blender or the bowl of a food processor. Puree until smooth, then transfer mixture to a medium bowl.
2. Cut each avocado lengthwise around pit and twist halves apart; remove pit. Peel each avocado half and cut into small dice. Add to tomatillo mixture along with scallions, poblano, jalapeno, garlic, and cilantro. Mix well and season to taste with salt, pepper, and lime juice. Let sit covered, for 1 hour at room temperature before serving. Serve with grilled meat, fish, or corn tortilla chips.

A few tips on healthy eating
In planning a diet, the important thing is to also endeavour to restrict your ingestion of refined carbohydrates, salt and fats.

* You can make really good smoothies by using reduced carbohydrate yogurt.
Ok, well, it’s not technically cooking, but if you must have smoothies you can make them with low carbohydrate yogurt and your favorite fruit. Clearly, you will need to make sure you use only fruit that is low in carbohydrates and make use of the whole fruit as the fiber is beneficial.
* Make reduced carbohydrate breadcrumbs for breaded foods.
Although you can possibly buy reduced carbohydrate bread crumbs, you can also make them by using low carbohydrate bread. All you have to do is toast the low carbohydrate bread in a gas or electric oven on a sheet of cookie paper. When it is well toasted, whizz it in the food processor using a coarse blade. Keep in an airtight jar.
