Ingredients
1/3 cup all-purpose flour 1 tsp baking powder 1 tsp salt 1/2 tsp pepper 1/4 tsp nutmeg 2 eggs 1 cup milk 1 tbsp butter, melted 2 cup cheddar cheese, shredded 2/3 lb spinach, frozen, chopped, thawed (3, 00 g) 1/4 cup sweet red pepper, fine chop 1 green onion, chopped

Preparation
In large bowl, stir together flour, baking powder, salt, pepper and nutmeg.
In separate bowl, whisk eggs; whisk in milk and butter. Stir in cheese, spinach, red pepper and onion. Pour over flour mixture; stir just until combined. Pour into greased 11x7-inch baking dish. Bake in 350F 180C oven for about 30 minutes or until set. Let cook for 10 minutes; slice into squares.
For easy family supper, cut them into larger squares and serve with vegetables and a dip, and thick slices of Italian bread.
