Idaho Potato Cream Sauce Recipe

Ingredients
1 small idaho potato (about 4 oz ), peeled, and diced 1/2 cup water 1 tbsp butter-flavor granules 1 tbsp onion powder 1 tsp chicken bouillon granules 1/2 to 1 cup skimmed evaporated milk 1/8 tsp pepper (white pepper optional)

Preparation
In small saucepan combine Idaho potato and water Bring to a boil, then cover and simmer until potato is tender, about 10 minutes.
Using an electric hand mixer, blend potatoes until smooth. Stir in 1/2 Cup milk along with the remaining seasonings, blending until smooth and adding additional milk to reach a cream sauce consistency.
Yield: 4 (1/2 Cup) servings
Serving Suggestion: Use as a base for creamy soups, casseroles and scalloped potato dishes, or anything to which you want to impart a velvety richness without adding fat.

At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.

* Understand the food labels
Watch out for food labeling that boasts 'low carb' - check the real nutritional information on the reverse of the tin or packet. A good number of are only marginally less and in some instances still more than a competitors standard brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - often the carbs are identical.
* Replace sugar with a low carb substitute such as splenda.
Recipes that call for sugar can be modified to make use of a sugar replacement like splenda instead. It is much lighter so you will need to expirement with it and it might not be perfect for everything, but it does bake up nice once you have it cracked.
