Run Down (Salt Catfish & Tomatoes) Recipe

Recipe Ingredients

1 lb mackerel fillets, or shad
1/4 cup lime juice
3 cup milk, coconut
1 large onions, chopped fine
2 garlic cloves
1 tbsp pepper, hot, red, chopped fine
1 lb tomatoes, peeled, chopped
1 salt
1 pepper, ground
1/4 tsp thyme
1 tbsp vinegar, malt

Recipe Preparation

Pour the lime juice over the fish and set aside. Cook the coconut
milk in a frying pan until it is oily. Add onion and garlic and cook
until onion is tender. Add the hot pepper, tomatoes, salt, papper,
thyme and vinegar. Stir and cook very gently for 10 minutes. Drain
fish, add, and cook until the fish is tender, about 10 minutes. Serve
hot with boiled bananas. Run down can also be used as a stuffing for
breadfruit.
Salt codfish or rock lobster tails can be used instead of shad or
mackerel.

Food Tips of the Week

Dieting tips

If you wish to become slim and boost your all round health, then, as any dietician will tell you, you really should eat a thoughtfully calculated sensible daily routine. At best, this should include five measures of grains and vegetables each day and also incorporate the right mix of important nutrients.
Some reduced carb diet pointers:
* Food labels can be misleading Don't trust food labeling that boasts to be 'low carb' - check the real nutritional information on the rear of the tin or package. Quite a few are only slightly less and in some cases still greater than a competitors standard brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - usually the carbs are just the same.

* Use soya flour or soy baking mix. When you need to use flour for baking, substitute soya flour or a bake mix like Atkins baking mix. In many cases, you can change your most popular recipes that use standard wheat flour to use these low carbohydrate alternatives.

Foods rich in lycopene
(includes guava, red bell peppers & tomato puree)

The phytochemical lycopene is a non-synthetic coloring agent and one of the phytochemical group known as 'carotenids'. It is the reason for the red hue of many food types.

Intrestingly, unlike numerous healthy agents, this useful phytochemical is not damaged if it is cooked, rather it is actually improved by being heated.

. Lycoprene's most interesting advantage is that it works as an antioxidant and seems to be of use in the battle to lower the risk of cancer.

Lycopene is the strongest quencher of singlet oxygen, which is correlated with skin aging. It is also thought by many experts to block the progression of diseases affecting arterial blood vessels.
