Preparation
Skirret is one of the many hardy perenniel vegetables which are typically grown as annuals. In Scotland it is known as crummock and in Germany as Zuckewurzel. A member of the carrot and parsley family, it is cultivated for the bunch of wrinkled, greyish roots that form from the crown. The roots have a sweet, tender white flesh which, when cooked like salsify or parsnips, is highly esteemed in oriental countries.
To prepare skirret for table, simply scrub the roots and cut them into suitable lengths for cooking. They can be boiled with a bit of salt and served, like salsify or parsnips, with butter. The roots can be stewed, braised, baked, batter-fried, or creamed. They are also delicious when mashed with potatoes or served with a cheese sauce. Skirret can be grated or chopped and add to salads, or dressed in a vinegar marinade and served alone as salad. The flavor is described as very sweet and unusual, making this vegetable a fine ingredient in stews, curries and soups.

Food Tips of the Week
Dieting made easy
When deciding on a weight loss program, it is essential to try to restrict your intake of salt, fat and refined carbohydrate.
The case against reduced carb diets
Its popular as hell, but it is truly safe for you?
Many scientific studies over the years have shown that exessive consumption of animal fat can result in greater risk of cancer, heart disease and other serious illnesses.
Eliminating carbohydrates might mean missing out on needed nutrients from 'good' carbohydrate foods which should be part of any well adjusted diet, specifically those that we get from vegetables, fruits and whole grains.
Foods containing allyl sulfides
( includes pickled shallots, white onions and green onion)
The onion and garlic family of foods is rich in allyl sulphides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer.
Even though there is not much scientific evidence published, allyl sulphides are also thought by many experts to aid in colds, arteriosclerosis and diabetes.
Foods containing allyl sulfides are also good for weight loss, so should be included in every diet.
