Spinach Salad In Fresh Orange Dressing W Pin Recipe
6 navel oranges -- chilled
4 cup spinach -- trimmed
1 1/2 cup watercress
1 tbsp pine nuts
1/3 cup shallot -- minced
2 cloves garlic -- peeled and
5 tbsp balsamic vinegar
2 tsp sherry vinegar
1 freshly ground black pepper
1 to taste
Peel the oranges and remove the white pith. Over a bowl positioned to
catch the juice, separate the segments of each orange from the
membrane with a sharp knife, discarding the seeds and set them aside.
Squeeze the residual juice from the membranes into the bowl and
Combine the spinach and watercress in a mixing bowl.
Put the pine nuts in a small saute pan and cook them over medium heat
for about 6 minutes, shaking the pan occasionally, until the nuts are
golden brown. Transfer the pine nuts to a small bowl.
Put the shallots, garlic, vinegars, and reserved orange juice into the
saute pan. Bring to a boil over low heat. Stir int he black pepper
then pour the dressing over the spinach and watercress. Toss to coat.
Arrange the mixture on salad plates, spoon orange segments atop each,
and garnish with the pine nuts, and if you like, orange wheels.

Dieting made easy
One useful tip is to drink plenty of water. From time to time at some stage in a hectic morning, you guess that you want a snack but in fact you might just need a refreshing glass of water or orange squash. The feelings of needing food and needing a drink are quite similar, but one of the two can lead to a broken diet and the other is ok.

Whilst you can sometimes buy low carb breadcrumbs, you can make them at home by using reduced carbohydrate bread. All you have to do is simply toast the reduced carb bread in a pre-heated oven on a baking tray. Once it is well toasted, whizz it in your food processor or blender. Keep in an airtight jar.
