Dandelion Flower Fritters Recipe

Recipe Ingredients

1 cup whole-wheat flour
2 tbsp olive oil
2 tsp baking powder
1 cup dandelion flowers, clean and
1 unsprayed
1 pinch salt
1 egg
1 nonstick vegetable-oil spray
1/2 cup low-fat milk -or- water

Recipe Preparation

This variation on pancakes uses the yellow puffs of the dandelion, a
good source of Vitamin A. In a bowl mix together flour, baking powder
and salt. In a separate bowl, beat egg, then mix with milk or water
and olive oil. Combine with dry mixture. Stir in yellow flowers
carefully, taking care not to crush them. Lightly spray a griddle or
frying pan with vegetable oil. Heat until thoroughly warmed. Pour
batter onto griddle by spoonfuls and cook like pancakes. Makes 10
fritters.

Food Tips of the Week

Diet tips

At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
The argument against reduced carbohydrate diets
Its popular as hell, but it is truly safe and healthy for you?
Although there is some evidence that indicates that low carbohydrate diets can help elimate surplus fat, some of this evidence has resulted in many arguments between nutrition experts, and their safety has been the cause of great debate
Eliminating carbs may mean missing out on required nutrients from healthy foods which must be part of any sensible diet, particularly those obtained from vegetables, fruits and whole grains.
Lycopene super foods
(includes apricot, red bell peppers & rosehip)

The nutrient lypcopene is a naturally occurring chemical compound and a member of the same group of phytochemicals as carotene. Lycopene is accountable for the red color of quite a few natural foods.

Usefully, unlike most other nutritional compounds, this useful phytochemical does not degrade if cooked, but is noticeably increased in efficacy by cooking.

. Lycoprene's most valuable health contribution is that it is an antioxidant and appears to be an asset in the battle to lower the risks of developing cancer.

This useful phytochemical is the most potent fighter of singlet oxygen, which is correlated with skin aging. It's also believed to slow down the growth of atherosclerosis.
