"This curry was like a performance of Beethoven's Ninth Symphony that I'd once heard.....especially the last movement, with everything screaming and banging 'Joy.' It stunned, it made one fear great art. My father could say nothing after the meal."
Anthony Burgess

Where life is colorful and varied, religion can be austere or unimportant. Where life is appallingly monotonous, religion must be emotional, dramatic and intense. Without the curry, boiled rice can be very dull."
C. Northcote Parkinson

Gotsu

Ingredients

1 medium eggplant
1/2 tbsp tamarind paste
1 large onion, chopped
2 tomato, diced
6 hot green chillies, slit & cut into, pieces
1 curry leaves
1 tsp mustard
1/2 tsp turmeric
1 garlic (opt)
1 salt, to taste
3 tbsp oil

Preparation

Chop the eggplant into very tiny pieces. Heat oil, add mustard seeds,
when popping add curry leaves, chillies, onions and fry till onions
become translucent. Add tomatoes and eggplant and fry for another
five minutes. If using tamarind paste add a cup and half of water, or
pour equal quantity of extract from fresh pulp. Throw in the
turmeric, salt and garlic. Let it simmer for a while until eggplant
becomes really soft and is barely able to retain its shape. Remove
from heat.

Tomato-Onion Gotsu

More tomatoes can be substituted instead of the eggplant for a tomato-
onion gotsu. Add more chillies if necessary.
