Pickled Eggs (Norwa) Recipe

Recipe Ingredients

12 medium eggs, hard-boiled (shelled)
20 oz white vinegar
1 each bay leaf
1 tsp mustard seeds
3 each cloves
1 tsp peppercorns, crushed
1/2 each cinnamon stick
1 tsp salt

Recipe Preparation

Directions: þ Place everything, except the eggs, into a saucepan. þ
Bring gently to the boil, then remove to a basin. Cover and leave to
cool. þ Let the liquid stand for 4 hours before using it, to allow
the
spices and herbs to flavour the vinegar. þ Strain the vinegar. þ
If the spices and are left in, they discolour the eggs. þ Put the
eggs into dry, sterelised, widw-necked jars-don't pack them
too firmly. þ Pour the liquid over the eggs to cover them, then
seal the jars. þ Don't use for a couple of days after they are
prepared. I find they
keep perfectly for at least 6 weeks but they must be kept
refrigerated. Cut the eggs into quarters or halves to serve or use
slices as a garnish on biscuits or cold meat.

Food Tips of the Week

Diet tips

At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
Some lower carb diet pointers:
* Replace sugar with splenda. Many recipes that need sugar can be changed to make use of splenda instead. It has a different density so you will need to do a bit of trial and error and it might not work for every recipe, but it does bake up nice once you get the measurements right.

* Make low carb bread crumbs for deep fried or oven baked foods. Although you can probably buy low carbohydrate breadcrumbs, you can make them yourself by using low carbohydrate bread. All you have to do is toast the reduced carb bread in the oven on a sheet of baking paper. Once it is quite hard and crispy, whizz it in the food processor using a coarse blade. Store in an airtight container.

The brassica family, Wonder foods that help with Your diet
(eg. Cauliflower, Boiled potatoes, Mizuna and Radishes)
Members of the brassica family are packed with vitamins (eg.folate and vit c), minerals (selenium and potassium, for example), isothiocyanates, antioxidents and indole-3-carbinol.

In addition to their numerous healthy effects, a few of these nutrients are thought to help reduce the cancer risk.
