Bibingka Recipe

Recipe Ingredients

2 1/2 lb mochi rice (5 1/2 cups)
5 1/2 cup water
1 can (13 oz) coconut milk
1 lb dark brown sugar
1 banana leaves

Recipe Preparation

In a rice cooker or large saucepan, rinse rice; drain. Add water and
cook rice. In a saucepan, combine coconut milk and 1 1/4 cups of the
brown sugar. Cook over medium heat for about 20 minutes, stirring
constantly, until the mixture thickens. Wilt banana leaves over low
heat on electric surface unit or in microwave oven; line a 13 x 9 x
2-inch baking pan. Preheat electric oven to 350 F. Stir remaining
brown sugar into the hot rice; mix well. Reserving 1/2 cup coconut
milk mixture, stir remainder into rice. Put into prepared pan. Pour
the reserved 1/2 cup coconut milk mixture over rice. Bake for 20
minutes then broil for 5 minutes to brown top. Cool and cut into
serving pieces. Makes 45 servings.

Food Tips of the Week

Dieting made easy

One useful tip is to drink plenty of water. From time to time at some stage in a hectic morning, you guess that you want a snack but in fact you might just need a refreshing glass of water or orange squash. The feelings of needing food and needing a drink are quite similar, but one of the two can lead to a broken diet and the other is ok.
Some reduced carb diet guidlines:
* Make low carbohydrate bread crumbs for deep fried foods. Although you can possibly buy low carbohydrate bread crumbs, you can make them at home by using reduced carbohydrate bread. All you have to do is simply toast the low carbohydrate bread in a preheated oven on a sheet of cookie paper. Once it is quite hard and crispy, whizz it in your food mill. To store, keep in an airtight jar or container.

* You can create really great smoothies by using reduced carbohydrate yogurt. Yes, you can't really describe it as cooking, but if you adore smoothies you can throw them together with low carb yogurt and fruit. Of course, you will need to make sure you only make use of fruit that is low in carbohydrates and use the whole fruit as you need the fiber.

These plants are rich in the carotenoids believed to play a role in helping prevent cancer, spefically cancer of the lungs. The majority of these also have a low calorie count, so should be a part of every diet.
