Anne-Marie's Blueberry Glace' Pie Recipe

Recipe Ingredients

4 cup blueberries
3/4 cup water
1 tbsp butter
1 cup sugar
3 tbsp cornstarch
1 dash salt
1 dash cinnamon
1 tsp lemon juice
1 9 inch baked pie shell
1 whipped cream -- for
1 garnish

Recipe Preparation

Simmer 1 cup less-than-perfect berries with water for 4 minutes. Add
mixed cornstarch and sugar, other ingredients except whole berries,
pie shell and whipped cream. Cook until thick and clear. Mix gently
with whole berries and pour into baked 9" pie shell. Chill and top
with whipped cream.

A few tips on healthy eating

In planning a diet, the important thing is to also endeavour to restrict your ingestion of refined carbohydrates, salt and fats.
Some lower carb diet guidlines:
* Don't miss meals Most low carb recipes are, well...., low in carbohydrates. Your body must have energy, and carbohydrates are a highly efficient source of energy. A lower carbohydrate diet requires great care in monitoring you intake of energy, as any energy given by non-carbohydrate sources is slower acting.

* Know what is in your food Don't trust advertizing that boasts 'low carb' - check the real nutritional information on the back of the product. A good number of are only slightly reduced and in some cases still higher than a competitors normal brand. Also, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - usually the carbs are the same.

The phytochemical lycopene is a non-synthetic chemical compound and part of the carotenid family of phytochemicals. This chemical is responsible for the vivid red colour of a good number of food types.

Intrestingly, unlike numerous healthy agents, it is not damaged if it is cooked, but is really increased in efficacy by being cooked.

. Its most valuable value is that it serves as an antioxidant and appears to help to lower the chances of developing cancer.

This useful phytochemical is the most efficacious fighter of singlet oxygen, which is correlated with skin aging. It's also thought by many experts to block the development of atherosclerosis.
