Apple Brown Betty (Nancy Eppel's) Recipe

Recipe Ingredients


CRUMB MIXTURE

1 1/3 cup fresh bread crumbs
3/4 cup packed brown sugar
1 tsp grated orange peel (fresh)
1/2 tsp ground cinnamon

BROWN BETTY

6 each granny smith apples (8 cups)
4 tbsp butter (cut in small pieces)
1/4 cup water

Recipe Preparation

PEEL, CORE AND QUARTER THE APPLES. HEAT OVEN TO 375 DEG F. HAVE A 1
1/2 QUART BAKING DISH READY. MIX ALL THE CRUMB MIXTURE INGREDIENTS
TOGETHER IN A BOWL UNTIL WELL BLENDED. ARRANGE HALF THE APPLE PIECES
OVER THE BOTTOM OF THE BAKING DISH. SPRINKLE WITH HALF THE CRUMB
MIXTURE. DOT WITH HALF THE BUTTER. REPEAT THE LAYERS. DRIZZLE THE
WATER OVER THE APPLES. COVER AND BAKE FOR 45 TO 50 MINUTES OR UNTIL
APPLES IN CENTER ARE TENDER. SERVE WARM OR AT ROOM TEMPERATURE. MAKES
6 SERVINGS. EACH SERVING =: 278 CALORIES; 8 g FAT; 1 g PROTEIN; 272
mg CARBO; 21 mg CHOL (WITH BUTTER) AND 0 CHOL WITH MARGARINE; 136 mg
SODIUM

Losing weight

Recognise the difference between hunger and thirst. At times when going through a hectic day, you imagine you feel hunger but if truth be told you just need a restorative tumbler of water or cranberry juice. The feelings of hunger and thirst are quite alike, but one can result in weight gain and the alternative is fine.
Some low carb diet pointers:
* Know what is in your food Don't believe the food label that boasts to be 'low carb' - check the nutritional information figures on the back of the product. Some are only a little lowered and in some instances still higher than a competitors standard brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' does not always mean 'low carb' - usually the carbs are just the same.

* Use reduced carb chocolate bars for cookies and muffins. If you have converted your favorite chocolate chip cookie or chocolate muffins recipe using soy flour, you really don't want to put in those high carbohydrate chocolate chips. Break up a reduced carb choccie bar into tiny chunks and use that as an alternative.

These orange and green foods are rich in alpha-carotene and beta-carotene thought by doctors to play a role in helping stop cancer, particularly cancers of the stomach and lesophagus. Most are low in calories, so should be included in every weight loss regime.
