Buckwheat Groats Recipe

Recipe Ingredients

2 teaspoon Safflower oil
2 Shailots, chopped
1 cl Garlic, minced
1 Celery stalk, sliced
1/2 cup Sliced mushrooms
1 Egg white
Pinch salt & pepper
1 cup Buckwheat groats, (kasha)
2 cup Chicken broth
1 tablespoon Pine nuts/sunflower seeds

Recipe Preparation

In a non-stick saucepan, heat oil and add vegetables. Cook, stirring,
over medium heat about 5 minutes. In a small bowl, beat egg white
with salt and pepper. Stir into saucepan. Stir in groats, then add
broth and bring to a boil. Reduce heat, cover and cook 10 minutes
until tender. When liquid is absorbed, add pine nuts and fluff with a
fork. Garnish with parsley. Food Exchange per serving: 1 STARCH/BREAD

Losing weight

Recognise the difference between hunger and thirst. At times when going through a hectic day, you imagine you feel hunger but if truth be told you just need a restorative tumbler of water or cranberry juice. The feelings of hunger and thirst are quite alike, but one can result in weight gain and the alternative is fine.
Some lower carb diet tips:
* Make reduced carb breadcrumbs for deep fried or oven baked foods. Although you may be able to buy low carb breadcrumbs, you may make them yourself by using low carb bread. All you have to do is simply toast the low carb bread in a pre-heated oven on a sheet of cookie paper. Once it is quite hard and crispy, process it in your food mill. To store, keep in an airtight container.

* Understand the food labels Don't trust sales blurb that claims to be 'low carb' - check the nutritional information on the back of the can or package. Many are only marginally lower and in some cases still more than a competitors usual brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - often the carbs are identically the same.
