Pearl Barley Salad With Broccoli Recipe
1/2 cup Pearl barley
1 Half a cup Water or stock
-pinch of salt and pepper
2 cup Broccoli florets, lightly
1 Rib celery, finely chopped
1 small Carrot, shredded
Place pearl barley and water in a pot and bring to a boil. Reduce
heat to medium and cook for about 45 mins. or until slightly soft.
Rinse under cold water and drain. Blend barley with vegetables. Add
vinaigrette to mixture and allow to marinate for 20 mins. before
serving. Makes 4 servings.
