Fast Pilaf Recipe
Recipe
Ingredients
1 cup onions, chopped 3 cl garlic 2 tomatoes, chopped 1 lb beans, canned 4 cup water 2 cup quick brown rice, quinoa, or couscous
Recipe
Preparation
Saute onions and garlic in olive oil until tender. Add tomatoes, beans, water and grain. Season with herbs and spices of your choice. Cook until the grain is tender. Serve with tossed salad. Food Exchange per serving: 1 STARCH/BREAD EXCHANGE + 1 VEGETABLE EXCHANGE (I would cut back on the beans to make it count as 1 starch/bread) (I also would use a combintion of couscous & quinoa and even add any free vegetables. This would be great to make ahead and take to work in the summer time.) From Vegetarian Times Typed by Lisa Greenwood

Diet tips
At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.
The case against reduced carbohydrate diets
Its popular as hell, but it is truly safe and healthy for you?
Remember, one fact that is often overlooked, it is damned hard (although by no means impossible) for vegetarians to follow a low carbohydrate diet.
Cutting out carbs may mean missing out on necessary nutrients from healthy foods which should be part of any well adjusted diet, specifically those obtained from vegetables, fruits and whole grains.
Foods containing allyl sulfides
( includes pickled shallots, leeks and spring onions)
The onion, leek and garlic family of foods is rich in allyl sulphides, a chemical which experts believe might be linked to a reduced risk of stomach and colon cancer.
Even though there is not much scientific proof at hand, allyl sulfides are also believed to aid in antiinflammatory effect, arteriosclerosis and physical exhaustion.
Foods containing allyl sulfides also have a low calorie count, so should be included in your weight loss program.
