Barley Casserole #2 Recipe from the Recipes 4U Collection

 

Barley Casserole #2 Recipe

Recipe Ingredients

1/2 lb fresh mushrooms
1 large onion, finely chopped
4 tbsp butter
1 cup barley
1 salt and pepper
3 cup beef broth
1 slivered almonds, toasted

Recipe Preparation

Saute mushrooms and onions in butter. Don't let onions brown. Mix in
barley, salt and pepper. Pour into buttered 1 1/2 qt casserole. Cover
with broth to 1/2 inch above barley. Cover and bake at 350 degrees
for 45 minutes, until liquid is absorbed and barley is tender.
Garnish with almonds.

At the start of a diet, people most certainly look at food store and big brand food items labelled 'low in fat'. To do this is far too often a miscalculation, in that an item could be significantly reduced in fats, but nevertheless elavated in calories and carbs.

* Know what is in your food Don't believe food packaging that claims to be 'low carb' - check the nutritional information figures on the back of the can or packet. A good number of are only marginally reduced and in some instances still greater than a competitors normal brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - often the carbs are exactly the same.
