Adobong Baboy (Pork Adobo) Recipe

Recipe Ingredients

1 lb pork loin - cut into chunks
1 head garlic
1/4 cup soy sauce
1 tsp black pepper(freshly ground)
1/2 cup white vinegar
1 tbsp vegetable oil

Recipe Preparation

Place the pork in a medium-size pot together with the garlic, soy
sauce, pepper and vinegar and let stand for 2 hours. *(See note
below) Cook slowly in the same pot until the pork is tender (about 30
minutes). Transfer pieces of garlic to a seperate pan and fry in hot
oil until brown. Add the pork pieces to the garlic and the fry until
brown. Drain. Add the broth to the fried pork and garlic and simmer
for 10 minutes.

* Note (I usually brown the pork BEFORE I add it to the soy sauce
mixture in order to render more of the fat out.

Food Tips of the Week

A few tips on healthy eating

In planning a diet, the important thing is to also endeavour to restrict your ingestion of refined carbohydrates, salt and fats.
Some reduced carbohydrate diet guidlines:

* Use soy flour or bake mix. When you require flour for baking, repalce it with soya flour or a baking mix like Atkins baking mix. In most situtations, you may adapt your favorite recipes that use conventional wheat flour to use these low carbohydrate alternatives.

Lycopene superfoods
(includes watermelon, red bell peppers and rosehip)

The chemical lypcopene is a non-synthetic coloring agent and part of the same family of phytochemicals as carotene. This chemical is the reason for the deep red color of many fruit, vegetables and pulses.

Intrestingly, unlike many other healthy agents, lycopene is not damaged during the cooking process, but is actually strengthened by going through the cooking process.

. Lycoprene's key value is that it is an antioxidant and is believed to help to lower the probabilty of cancer.

This useful phytochemical is the most effective quencher of singlet oxygen, which is correlated with aging of the skin. It is also thought by nutritionalists to slow down the development of atherosclerosis.
