Couscous Salad Recipe

Recipe Ingredients

2 cup cooked couscous
6 green onions, chopped
2 medium tomatoes, seeded and cut into small, pieces
1 cup cucumber, chopped
2 cup cooked garbanzo beans
1 cup parsley, chopped

FOR THE DRESSING

3/4 cup olive oil
1/2 cup fresh lemon juice
2 cl minced garlic
1 tsp dijon mustard
1 tsp ground coriander
1 tsp salt
1 fresh ground black pepper

Recipe Preparation

Mix all ingredients together and toss well with the salad dressing.
Garnish with fresh parsley.
