Turkey Bean & Rice Skillet Recipe

Recipe Ingredients

1/2 tsp olive oil
1 lb turkey light meat, skinless
1 cooked
1/2 cup onions -- chopped
1/2 cup bell peppers -- chopped
1/2 cup celery -- sliced
14 1/2 oz crushed tomatoes
15 oz dark red kidney beans --
1 undrained
8 oz no-salt-added tomato sauce
1/4 cup water
2 tsp chili powder
1 cup long-grain rice
1 tsp salt
3/4 cup low-fat monterey jack cheese
1 grated

Recipe Preparation

In a skillet, heat oil over medium heat. Add turkey, onions, bell
peppers, and celery. Cook until turkey is done and vegetables are
tender. Stir in crushed tomatoes, kidney beans, tomato sauce, water,
chili powder, and salt. Bring to a boil. Stir in rice. Cover and
reduce heat. Simmer, stirring occasionally, 10 minutes or until rice
is done. Sprinkle cheese on top.

Advice on losing weight

Make sure that you drink enough fluids. Sometimes at some stage in a hectic work day, you feel you need food when in truth you may need a refreshing glass of water or cranberry juice. * Replace sugar with a low carb substitute such as splenda. Many recipes that require sugar can be adapted to use splenda instead. It is much lighter so you will need to do a bit of trial and error and it may not work in every case, but it does bake up nice once you have it cracked.
