Fresh Corn & Sausage Fritters Recipe

Recipe Ingredients

1 cup all-purpose flour, sifted
1 tsp baking powder
1 tsp salt
1/8 tsp pepper
1/4 tsp paprika
1 cup sausage, cooked and crumbled
1 cup fresh corn off the cob
2 egg yolks, beaten
2 tbsp milk
2 egg whites, beaten stiff
1 oil, for frying

Recipe Preparation

Sift flour, baking powder, and spices together in a mixing bowl. Add
sausage, corn, egg yolks, and milk; mix until blended. Fold in stiffly
beaten egg whites. Drop by heaping teaspoonfuls into oil heated to
360 - 365 degrees. Cook 3 to 5 minutes, turning to brown on all
sides. Drain on paper towels.

Makes about 24 fritters
